Homemade Pepperoni...

Last weekend our garage was turned into a butcher shop. Elmer, his brother, and cousin got together and turned the pieces of deer and antelope, that were too small for steaks, into pepperoni.

So, you start out by mixing the ground-up meat with ground bacon.



and you have to get your hands in there to mix it all up.


Then, you put all that ground stuff into a $450 Cabella's sausage stuffer which squeezes it into casings. Now see, just the word "casings" kinda makes me sick...
Then, you hang them up to "cure" overnight.




Even Joe's not so sure...


and presto! You have homemade pepperoni.

Please never, ever post photos of meat production without some sort of warning.

Tallulah, I'll bring you some to taste if you want to. The guys said it was really good, but after watching them make it I just can't bring myself to eat any.

Jacki, I agree and Kate, well, we're saving some just for you for when you come down for Thanksgiving.

There is no cooking involved?? Does it just hang for one night? I'm just curious....I don't plan to make any!

Oops! I forgot that all important step - the next day they put it on the smoker for about 30 minutes!

Yep Jaci, it's always an adventure when you live with Elmer. Married 23 years and every year he thinks I'm just going to love this stuff.
